Crispy Spinach Burger Patties (Ready in 15 Minutes)

These are pan-fried patties built around frozen spinach, egg, cheese, and breadcrumbs — a straightforward veggie burger you can pull off in 15 minutes with one pan. They hold together well, have real flavor from the red pepper flakes and garlic, and don’t require a food processor or any special equipment.

The short version of why this works

Two things determine whether these patties hold together or fall apart in the pan. First, the spinach has to be genuinely dry — squeeze it in a clean kitchen towel or press it hard in a colander, because excess water breaks down the binder. Second, the breadcrumbs go on the outside only, not mixed in. That outer coating sets fast in the hot oil and forms a crust that keeps the patty intact while the inside finishes cooking. If you mix the crumbs into the patty, you lose that structural shell and end up with something that crumbles when you flip it.

If something goes sideways

  • Patties fall apart when flipping: The spinach was too wet, or the patties were moved too soon. Let them cook undisturbed until the bottom crust is visibly golden — usually 3 to 4 minutes on medium heat — before attempting to flip.
  • Breadcrumb coating falls off in the pan: Press the crumbs firmly onto each patty and let them rest for a minute before they go into the oil. Rushing them into the pan before the coating adheres is the usual cause.
  • Inside is still cold or raw-tasting after the outside browns: The heat is too high. Lower it to medium-low, cover the pan loosely with a lid or a sheet of foil, and give each side another minute or two.
  • Patties are too salty: The recipe calls for a full teaspoon of salt plus shredded cheese, which already carries sodium. If your cheese is sharp or pre-salted, cut the added salt to half a teaspoon.
  • Mixture is too loose to shape: Add breadcrumbs one tablespoon at a time directly to the mix — not the coating — until it holds a shape when pressed. This usually only happens if the spinach wasn’t drained thoroughly enough.

About the ingredients

The recipe calls for one bag of spinach, thawed and drained — that means frozen chopped spinach, not fresh. Fresh spinach won’t work here without cooking it down first, which adds a step and more moisture to manage. For the cheese, a sharp cheddar or pepper jack gives the most flavor payoff; a mild mozzarella tends to disappear into the mix. Skip the egg yolk and use only egg whites if you want a slightly firmer texture — but keep at least one whole egg or the patties won’t bind at all. Panko breadcrumbs make a crunchier crust than standard fine breadcrumbs and are worth using if you have them.

Equipment

  • 10-inch non-stick skillet
  • Mixing bowl (large)
  • Clean kitchen towel or cheesecloth (for squeezing spinach)
  • Spatula (flat, wide)
  • Measuring cups and spoons

Ingredients

  • 10 oz frozen chopped spinach 283g, thawed and well-drained
  • 2 large egg whites
  • 1 large egg
  • ¼ cup onion finely diced, 40g
  • ½ cup sharp cheddar cheese shredded, 2 oz / 57g
  • ½ cup breadcrumbs 30g, panko recommended for extra crunch
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • 2-3 tablespoons neutral oil vegetable or canola, for frying

Instructions

  • Squeeze the thawed spinach in a clean kitchen towel until completely dry — no liquid should drip when you press hard. In a large mixing bowl, combine the squeezed spinach, egg whites, whole egg, diced onion, shredded cheese, red pepper flakes, salt, and garlic powder. Mix until evenly combined.
10 oz frozen chopped spinach, 2 large egg whites, 1 large egg, 1/4 cup onion, 1/2 cup sharp cheddar cheese, 1 teaspoon red pepper flakes, 1 teaspoon salt, 1/2 teaspoon garlic powder
  • Divide the mixture into 4 equal portions and shape each into a patty about ½ inch (1.25cm) thick. Spread the breadcrumbs on a plate and press each patty into the crumbs on both sides, coating evenly.
    1/2 cup breadcrumbs
  • Heat 2-3 tablespoons of neutral oil in a 10-inch non-stick skillet over medium heat until the oil shimmers.
    2-3 tablespoons neutral oil
  • Fry the patties for 4-5 minutes per side until golden brown and crispy on the outside and heated through in the centre. Avoid moving them for the first 3-4 minutes so the crust sets before flipping.

Notes

Storage: Cooked patties keep in an airtight container in the fridge for up to 3 days. Reheat in a dry skillet over medium heat for 2-3 minutes per side to restore crispness.
Freezer-friendly: Freeze uncooked, shaped patties on a parchment-lined baking sheet until solid, then transfer to a freezer bag. Cook from frozen, adding 2-3 extra minutes per side. Keeps for up to 2 months.
Make-ahead: Shape and bread the patties up to 24 hours before cooking. Layer with parchment between each patty and refrigerate.
Substitution: Swap breadcrumbs for panko for an extra-crunchy crust. Use pepper jack cheese instead of mild cheddar for more flavour punch.
Pro tip: Squeeze the thawed spinach in a clean kitchen towel until no more liquid drips out — this is the single most important step for patties that hold together.

Your questions, answered

Can I make these ahead and refrigerate them before cooking?

Yes — shaped, uncooked patties keep in the fridge for up to 24 hours. Stack them with a small piece of parchment or wax paper between each one so they don’t stick together.

Can I bake these instead of frying them?

You can bake them at 400°F on a lightly oiled baking sheet for about 20 minutes, flipping once halfway through. The crust won’t be as crisp as the pan-fried version, but they’ll hold together fine.

Can I freeze the cooked patties?

Yes. Let them cool completely, then freeze in a single layer before transferring to a bag or container. Reheat from frozen in a dry pan over medium-low heat or in a 375°F oven until heated through.

What cheese works best in this recipe?

Sharp cheddar or pepper jack give the clearest flavor. Softer cheeses like fresh mozzarella add too much moisture to the mix and can make the patties harder to shape.

How do I know when the patties are fully cooked?

Both sides should be a deep golden brown and the center should feel firm, not soft, when pressed lightly. Because these contain egg, cook them through completely — no pink or wet center.

Can I make these gluten-free?

Swap the breadcrumbs for a gluten-free variety or use crushed gluten-free crackers. The texture will be slightly different but the patties will still bind and hold their shape.
