Colombian Arepa Burger

The Colombian Arepa Burger is a culinary marvel that seamlessly fuses the rich food culture of Colombia with the universally adored concept of a burger. By transforming the humble, iconic arepa—a thick, circular cornmeal flatbread deeply entwined with Colombia’s heritage—into the vessel for a modern burger, this dish pays homage to tradition while embracing innovation. It captures the best of both worlds: the rustic essence of Colombian street food and the comfort food appeal of a classic hamburger.

Arepas are a cornerstone of Colombian cuisine, stretching back to pre-Columbian times where indigenous peoples prepared them using ground corn. Over centuries, they’ve remained a cultural and culinary fixture in Colombia, available in myriad forms depending on the region and preparation style. From the coastal areas to the high-altitude Andean regions, the arepa is versatile, serving as a snack, side dish, or meal in itself. It’s this adaptability that makes it the perfect base for a burger, marrying traditional flavors with elements of global gastronomy.

In this recipe, the arepa serves a pivotal role, replacing the conventional burger bun with a hearty corn-based alternative. Its crisp exterior, achieved by pan-searing, and its soft, melt-in-your-mouth interior, provide an unbeatable combination of textures. The arepa’s subtly nutty, slightly salty flavor complements the savory, juicy beef patty and the melty richness of the cheese used in the construction of this unique burger. The dough’s preparation mirrors traditional methods, honoring its cultural roots by using masarepa (pre-cooked cornmeal) and ingredients like melted butter for a little indulgent flair.

The ground beef patty, meanwhile, is kept straightforward to highlight the natural beefy flavor. Lightly seasoned with salt and freshly ground black pepper, it serves as a hearty, meaty centerpiece while allowing the arepa and toppings to shine. A world of possibility opens with the toppings: the burger is adorned with fresh guacamole, crisp lettuce leaves, and juicy tomato slices, showcasing a balance of creamy, crunchy, and tangy elements. For a Colombian-inspired twist, feel free to expand further by including ingredients like caramelized onions, pickled jalapeños, or even tangy Colombian ají sauce.

This dish is deeply inspired by the energetic street food culture of Colombia. If you stroll through Bogotá or Medellín, you’ll encounter countless kiosks and vendors serving traditional arepas topped or stuffed with meats, cheeses, or other savory delights. The Colombian Arepa Burger channels this lively, communal spirit by blending it with a universally recognized food form: the burger.

By offering a fusion of tradition and modernity, the Colombian Arepa Burger bridges culinary worlds and celebrates the global love for comfort food with uniquely Colombian character. It’s a fantastic way to honor Colombian heritage while also engaging a wider audience that appreciates bold, satisfying flavors and inventive kitchen creativity. Perfect for weekend dinners, casual gatherings, or food experiments with friends, it’s more than just a recipe—it’s a delicious conversation piece that tells a story with every bite.

Ingredients

Arepa Dough

  • 2 cups pre-cooked cornmeal Masarepa, preferably white
  • 2 cups warm water
  • ½ teaspoon salt
  • 1 tablespoon butter melted

Burger Patties

  • 500 grams ground beef 80% lean
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper freshly ground

Toppings

  • 4 slices cheese Provolone or your choice
  • 8 tablespoons guacamole freshly made
  • 4 leaves lettuce
  • 1 large tomato sliced

Instructions

  • Prepare the Arepa Dough: In a large bowl, combine the pre-cooked cornmeal and salt. Gradually add warm water, mixing continuously until a soft dough forms. Add the melted butter and knead for about 5 minutes until smooth and pliable. Let the dough rest for 5 minutes.
  • Shape and Cook Arepas: Divide the dough into 8 equal portions. Shape each portion into a disk about 1 cm thick. Heat a large skillet over medium-high heat. Cook the arepas for about 5 minutes on each side, until golden and lightly crisp. Keep warm.
  • Form and Cook Burger Patties: Season the ground beef with salt and black pepper. Form into 4 patties, slightly larger than the arepas to account for shrinkage during cooking. In the same skillet, cook patties over medium-high heat for about 4-5 minutes per side for medium doneness. Place a slice of cheese on each patty during the last minute of cooking to melt.
  • Assemble the Arepa Burgers: Split each arepa and layer with a beef patty, a spoonful of guacamole, a lettuce leaf, and a slice of tomato. Top with the remaining arepa halves.

Notes

For an extra twist, try adding caramelized onions or pickled jalapeños. Use a different type of cheese for variety, such as cheddar or gouda.
