I’ve been wanting to make a veggie burger recipe for a while, and this week’s recipe screamed at me to go ahead and do these Vegetarian Chickpea and Zucchini Burgers.
My hubby nick-named this burger the “hummus” burger because of the chickpeas, but the seasoning is versatile, so you could make this taste however you want. I topped ours with a homemade herbaceous green goddess dressing, lettuce, and tomato on a whole wheat bun. I will make these again and didn’t miss the meat at all!
Yummy Vegetarian Chickpea and Zucchini Burgers
These hearty vegetarian chickpea and zucchini burgers are a must-try. These are very healthy and perfect when you are on a diet.
Ingredients
- 1 can chickpeas rinsed and drained
- 1 medium zucchini peeled and diced
- 1 ½ teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon cumin
- ½ teaspoon chicken seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 medium egg
- 2 tablespoons olive oil divided
Instructions
- Put all ingredients into a food processor (only 1 tablespoon of olive oil) and pulse until finely chopped (not pureed).
- Then form the mixture into hamburger sized patties. Preheat a large skillet with 1 tablespoon of olive oil to medium-high heat.
- Add the chickpea patties and cook on both sides for 4 to 5 minutes or until browned.
- Once cooked, top with your favourite burger toppings and enjoy!
