Japanese Okonomiyaki Burger

The Japanese Okonomiyaki Burger is a fusion dish that seamlessly integrates the traditional flavors of Japan with the universal appeal of a burger. This recipe is rooted in Okonomiyaki, a beloved Japanese savory pancake, often referred to as “Japanese pizza” or “Japanese soul food.” Its name translates to “grilled as you like it,” and the dish originates from the Kansai or Hiroshima regions of Japan, with each region having its unique style of preparation. Okonomiyaki reflects a certain culinary flexibility and creativity, as it allows for a wide range of ingredients, from cabbage and pork to seafood or even cheese.

The concept behind the Okonomiyaki Burger is to take the spirit and foundation of Okonomiyaki and reimagine it in the handheld, compact, and oh-so-familiar form of a burger. This innovation is not only a cultural mash-up but also a balance of textures and flavors that evokes both surprise and comfort. The “patty” in this recipe is essentially an Okonomiyaki pancake, made with cabbage, scallions, and ground pork bound together in a batter infused with sake, soy sauce, and just a pinch of salt for seasoning. It’s pan-fried to create a crispy, golden crust while maintaining a tender, flavorful interior—reminiscent of the slightly chewy yet soft texture that true fans of Okonomiyaki adore.

Building on this foundational element, the Okonomiyaki Burger integrates other hallmark flavors of Japanese cuisine. The addition of okonomiyaki sauce—a sweet, tangy, and umami-packed condiment akin to Worcestershire sauce—drizzled over the patty brings an authentic taste that ties the dish back to its roots. Kewpie mayo, with its rich and slightly sweet flavor, is the quintessential choice for adding creaminess, though a well-crafted homemade substitute (blending regular mayo with rice vinegar and sugar) works just as well.

What sets this fusion recipe apart is its ability to embrace global culinary trends while honoring its Japanese origins. It celebrates comfort food in two familiar guises: the classic burger for Western audiences and Okonomiyaki for Japanese food lovers. Presented on a toasted brioche bun to complement the umami-rich centerpiece, the dish feels indulgent yet balanced, with the crisp lettuce providing freshness and contrast.

The beauty of this recipe also lies in its adaptability. Just as traditional Okonomiyaki allows for customized toppings, this burger can evolve. Crispy fried onions or shredded nori (seaweed) could add another layer of texture and flavor. It also invites experimentation, encouraging the home chef to play with ingredients that suit their palette.

Inspiration for the Okonomiyaki Burger comes from Japan’s lively street food culture, where innovation often meets tradition, and flavors are bold and unapologetically layered. It’s an homage to this dynamic culinary spirit while delivering a contemporary dish perfect for lunch, dinner, or a creative cookout option. Whether you’re a seasoned lover of Japanese cuisine or just an adventurous foodie, the Japanese Okonomiyaki Burger promises a sensory journey—one that starts in the bustling streets of Osaka and lands deliciously in your hands.

Ingredients

  • 1 cup cabbage thinly sliced
  • 1 cup all-purpose flour
  • 1 large egg lightly beaten
  • ¾ cup water
  • 2 tbsp sake
  • 1 tsp soy sauce
  • ½ tsp salt
  • ½ cup scallions thinly sliced
  • ½ pound ground pork
  • 4 medium burger buns preferably brioche
  • 4 leaves lettuce
  • 4 tbsp okonomiyaki sauce
  • 4 tbsp Kewpie mayo

Instructions

  • begin with preparing the okonomiyaki batter by combining cabbage, flour, egg, water, sake, soy sauce, and salt in a large bowl. Mix until the cabbage is well coated.
  • Gently fold in the scallions and ground pork into the batter until evenly incorporated.
  • Heat a non-stick skillet over medium heat. Scoop a generous ladle of the mixture and flatten it into a patty about the size of your buns. Cook each side for 4-5 minutes until the exterior is crispy and golden brown. Repeat to form four patties.
  • Toast the burger buns lightly.
  • Construct the burger by placing a lettuce leaf on the bottom bun, then layer with an okonomiyaki patty. Drizzle okonomiyaki sauce and Kewpie mayo over the patty before capping with the top bun.

Notes

For an extra layer of texture, consider adding a handful of crispy fried onions inside the burger. If Kewpie mayo isn’t available, regular mayonnaise with a dash of rice vinegar and a pinch of sugar can mimic its taste.
