Chilean Merquén-Spiced Chicken Burger

The Chilean Merquén-Spiced Chicken Burger is a culinary triumph that pays homage to the bold and vibrant flavors of Chilean cuisine, particularly the fascinating spice blend known as “Merquén.” This burger is an enticing fusion of traditional spices and a globally loved food concept: the burger. With its smoky, spicy, and slightly earthy flavor profile, this dish brings the spirit of Chile to your table in an inventive and accessible way.

Merquén (also known as merkén) is the star of this recipe. It is a distinctive spice blend rooted in the culinary traditions of the indigenous Mapuche people of Chile’s southern regions. The blend is primarily composed of dried and smoked cacho de cabra chili peppers, resembling small goat horns, which are complemented by coriander seeds and salt. Some regional variations may also incorporate additional elements like garlic or cumin. Characterized by its complex smokiness and gentle heat, Merquén holds a special place in Chilean kitchens, often used to season meats, stews, vegetables, and even snacks like cheese or roasted nuts. Its versatility and boldness make it an ideal choice for seasoning ground chicken to elevate the flavor of these burgers.

This recipe reimagines the classic chicken burger by allowing the Merquén spice to shine. Ground chicken, known for its lean, mild flavor, serves as the perfect canvas for the intricate spice blend. By combining the chicken with finely minced garlic, chopped onion, and Merquén, the patties are infused with a depth of flavor that is smoky, slightly spicy, and warmly aromatic. Every bite encapsulates the dynamic essence of Chilean cooking, making these burgers both unique and unforgettable.

The dish balances simplicity with sophistication. The toppings—crisp lettuce, juicy fresh tomato slices, and creamy avocado—add texture and refreshing elements that complement the burger’s bold flavor. The toasted burger buns provide the perfect vessel, delivering a satisfying crunch to the tender, juicy chicken patty. With its vibrant presentation and layered flavors, this burger is an ideal choice for both casual meals and gatherings where you want to impress with something a little out of the ordinary.

To personalize your burger, consider the optional suggestion of marinating the chicken mixture with the spices beforehand, allowing the flavors to meld even more deeply into the meat. While Merquén adds authenticity, you can substitute it with a blend of smoked paprika and a pinch of cayenne pepper if needed—although the experience of authentic Merquén is truly something special.

The Chilean Merquén-Spiced Chicken Burger isn’t just a meal; it’s a bridge to another culture. It celebrates the culinary heritage of the Mapuche people and showcases how traditional ingredients can be reimagined in modern and versatile ways. Whether you’re new to Chilean flavors or already a fan, this recipe offers an opportunity to explore the richness of Chile’s spice landscape while indulging in a universally loved comfort food. Try it out, and let the fiery warmth of Merquén transport you to a faraway land with its every smoky, spicy bite.

Ingredients

  • 500 g ground chicken preferably organic
  • 2 tbsp Merquén spice blend Chile origin
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 1 tbsp olive oil extra-virgin
  • 4 medium burger buns gluten-free if needed
  • 1 pinch salt to taste
  • 1 pinch ground black pepper to taste
  • 4 leaves lettuce fresh
  • 1 medium tomato sliced, from ripe tomatoes
  • 1 medium avocado sliced, optional

Instructions

  • In a large mixing bowl, combine the ground chicken, Merquén spice blend, minced garlic, and chopped onion. Mix thoroughly until the ingredients are evenly distributed.
  • Shape the mixture into four equal patties, slightly larger than the size of your buns as they will shrink while cooking.
  • Heat the olive oil in a large skillet over medium heat. Once the oil shimmers, add the patties. Cook for approximately 6-7 minutes on each side, or until the internal temperature reaches 74°C (165°F) and the outside is golden brown.
  • While the patties are cooking, toast the burger buns in a separate pan or oven until they are lightly browned.
  • Assemble your burgers by placing a chicken patty on the bottom half of each bun. Add lettuce, tomato, and, if desired, avocado slices. Top with the other half of the bun and serve immediately.

Notes

For an extra flavor boost, marinate the chicken with the spices for an hour beforehand. If merquén is unavailable, a blend of smoked paprika and a pinch of cayenne pepper can be used as a substitute.
