For the Burger Patties

  • 1 lb Ground beef (80/20 blend) For a juicier patty
  • 1 tbsp Soy sauce Preferably low sodium
  • 1 tbsp Aji amarillo paste Adds a signature Peruvian heat
  • 1 tsp Ground cumin
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

For the Stir-Fry Topping

  • 1 tbsp Vegetable oil For sautéing
  • 1 cup Red onion Sliced into thin strips
  • 1 cup Tomatoes Diced, preferably Roma
  • 1 tbsp Soy sauce
  • 1 tbsp Red wine vinegar
  • 1 tbsp Fresh cilantro Chopped

For Assembly

  • 4 pieces Burger buns Preferably brioche
  • 4 slices Cheese American or Swiss
  • 0.5 cup French fries Crispy, for topping
  • 0.5 cup Aji amarillo mayonnaise Optional, for added Peruvian flavor

Instructions
 

  • In a mixing bowl, combine ground beef, soy sauce, aji amarillo paste, cumin, smoked paprika, salt, and black pepper. Mix until just combined, then form into four equal patties.
  • In a heavy skillet over medium-high heat, add vegetable oil, followed by red onions and tomatoes. Sauté until onions are tender and tomatoes release their juices, about 5 minutes.
  • Add soy sauce and red wine vinegar to the pan, toss to coat, and cook for another 2 minutes until slightly reduced. Remove from heat and stir in chopped cilantro.
  • Heat a grill or pan over medium-high heat. Cook burger patties for about 4 minutes per side, or until desired doneness. In the last minute, add a slice of cheese to each patty to melt.
  • Lightly toast the brioche buns, then spread aji amarillo mayonnaise on the bottom bun. Place the burger patty on top, followed by a generous scoop of stir-fry mixture and crispy French fries.
