Burger patties

  • 500 g ground pork preferably organic or free-range
  • 2 tablespoons Aji Amarillo paste available in specialty stores
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin powder
  • 1 medium egg beaten
  • 0.5 cup breadcrumbs Panko or homemade
  • 1 pinch salt to taste
  • 1 pinch ground black pepper to taste

Burger assembly

  • 4 medium burger buns preferably brioche
  • 1 cup sliced avocado ripe
  • 0.5 cup sliced red onion thinly sliced
  • 1 cup arugula fresh
  • 0.25 cup Aji Amarillo mayonnaise mix regular mayo with Aji Amarillo paste to taste

Instructions
 

  • In a large bowl, combine the ground pork, Aji Amarillo paste, oregano, cumin powder, beaten egg, and breadcrumbs. Season with salt and pepper. Mix gently with your hands until just combined.
  • Form the mixture into four equal-sized patties. Be careful not to overwork the meat to maintain tenderness.
  • Preheat a grill or a skillet on medium-high heat (about 200°C/400°F). Lightly brush it with oil to prevent sticking.
  • Place the patties on the grill or skillet. Cook for about 6-7 minutes on each side or until the internal temperature reaches 70°C (160°F) and the patties are charred lightly.
  • While the patties are cooking, lightly toast the burger buns on the grill or in a toaster until golden brown.
  • To assemble the burgers, spread a layer of Aji Amarillo mayonnaise on the inside of the buns. Layer with arugula, the cooked patty, avocado slices, and red onions. Top with the other half of the bun.

Notes

For an extra flavor boost, try adding sautéed mushrooms or a slice of melting cheese over the patties in the last minute of cooking.
