Instructions
Heat olive oil in a large skillet over medium heat (350°F / 175°C). Sauté the chopped onion until it turns translucent—about 5–7 minutes. Look for light golden edges for deeper sweetness.
Add the minced garlic and cook for 1 minute until fragrant, being careful not to brown the garlic.
Add ground beef. Break it apart with a wooden spoon, browning evenly for about 6–8 minutes. Any fat rendered can be drained for a leaner result, or left for richness.
Stir in the uncooked rice, followed by the tomatoes, beef broth, smoked paprika, oregano, and pepper. Mix well to coat the rice.
Bring to a boil, then reduce to low heat (simmer) and cover. Let cook for 18–20 minutes, or until rice is fully tender and most of the liquid is absorbed.
Once cooked, let the skillet rest covered (off heat) for 5 minutes to allow rice to finish steaming and flavors to settle.
Fluff with a fork, sprinkle chopped parsley on top, and serve piping hot.
