Instructions
In a skillet over medium heat (about 350°F / 175°C), melt the butter. Add the diced onions and sauté for 8–10 minutes until they’re translucent and just beginning to caramelize. Stir occasionally to prevent burning. Set aside.
Meanwhile, season the ground beef with kosher salt and pepper. Spread the seasoned ground beef evenly onto a parchment-lined baking sheet to form a flat rectangle, about 1/4-inch thick. Use a bench scraper or knife to divide it into 8 even mini-patties. Do not separate yet.
Preheat a griddle or cast-iron skillet to medium-high heat (about 400°F / 200°C). Cut and lift each patty with a spatula and sear for about 2 minutes per side or until browned and cooked through. Toward the last 30 seconds, place a cheese quarter and bacon slice on top of each patty.
Right before assembling, place the slider buns cut-side down on the same hot griddle for 30 seconds to lightly toast them. This step adds flavor and prevents sogginess.
Assemble the sliders by spooning a small amount of sautéed onions onto the bottom bun, topping with the cheesy bacon patty, and finishing with pickles (if using) and the top bun. Serve immediately while hot and melty.
