Inspired by the rich flavors of Uruguayan cuisine, this Beef and Chimichurri Slider captures the essence of South America’s grilling traditions. Featuring tender beef patties topped with a vibrant, herbaceous chimichurri sauce, this dish is perfect for a summer gathering or a casual dinner with friends.
Prepare the Chimichurri: In a bowl, combine the chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, and chili flakes. Stir well and season with salt and pepper to taste. Allow the flavors to meld while you prepare the sliders.
Make the Beef Patties: In a large bowl, mix the ground beef with salt and black pepper. Divide into four equal parts, forming into small patties about the size of your buns.
Cook the Patties: Heat a grill pan over medium-high heat. Place the patties on the grill and cook for 4-5 minutes on each side until they are browned and cooked to your liking (internal temperature should reach 70°C / 160°F for medium). In the last minute of cooking, place a slice of provolone cheese on each patty and allow it to melt.
Toast the Buns: Meanwhile, halve the slider buns and lightly toast them on the grill until they are golden brown.
Assemble the Sliders: Place a melted cheese-topped patty on each bun base. Top generously with chimichurri sauce and finish with the bun lid. Serve immediately.

Notes
For a richer flavor, you can add a dash of lime juice to the chimichurri. For a low-carb option, use lettuce leaves instead of buns.
