Instructions
Drain and shred the jackfruit using your fingers or a fork, removing any hard core pieces.
Heat 2 tbsp olive oil in a skillet over medium heat. Add the diced onion and sauté until soft, about 5 minutes.
Add the garlic and ginger, cooking until fragrant, about 1 minute.
Mix in the shredded jackfruit and the jerk marinade ingredients. Stir well to coat everything evenly.
Reduce heat to low, cover, and let simmer for 15 minutes, stirring occasionally.
Remove the lid, increase heat, and cook for another 5 minutes, allowing the sauce to thicken and the jackfruit to develop a slightly crispy texture.
Toast the burger buns and assemble with vegan mayo (optional), shredded lettuce, jerk jackfruit, and sliced mango.
