An innovative fusion of the traditional Spanish Paella and the beloved burger, this dish captures the vibrant flavors of the Mediterranean coast in a handheld delight.
In a large bowl, combine the ground beef, chopped shrimp, smoked paprika, crushed saffron, minced garlic, salt, and pepper. Mix gently using your hands until just combined. Divide the mixture into four equal parts and shape each into a patty about 1.5 cm thick.
Preheat a grill or skillet over medium-high heat. Cook the patties for about 5-6 minutes on each side, until browned and cooked through. Use a thermometer and look for an internal temperature of 160°F (70°C) for medium doneness.
To assemble, spread aioli on each half of the toasted buns. Place a burger patty on the bottom half, followed by a layer of roasted red peppers. Sprinkle with fresh parsley and top with the remaining half of the bun.

Notes
For an extra flavor boost, marinate the shrimp with a little olive oil, lemon juice, and crushed garlic for 15 minutes before mixing into the patty. If you prefer a vegetarian twist, replace ground beef with a mix of cooked chickpeas and quinoa.
