This dish is a fun and flavorful take on the classic breakfast sandwich, using standard hamburger buns as the perfect vehicle for melted cheese, fluffy eggs, and savory sausage. Born from weekend brunch experimentation, these sliders bring together nostalgic diner flavors with a shareable, party-ready presentation that’s as delightful visually as it is to eat.
Slice the hamburger buns in half and lightly butter the cut sides. Place them cut-side down on a skillet or griddle over medium heat. Toast until golden brown and slightly crisp—about 2 minutes. Set aside.
In a small bowl, whisk the eggs with salt and pepper until frothy. Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once melted and foamy, pour in the eggs, stirring occasionally until they are just set but still moist. Remove from heat—carry-over cooking will finish them.
Place a warm sausage patty over the bottom of each toasted bun. If using mayonnaise, spread a thin layer on the cut side first.
