This gourmet burger is a luxurious twist on the classic beef burger, combining the deep umami of porcini mushrooms with sweet, caramelized roasted garlic. Instructions
Preheat oven to 200°C (400°F). Place the garlic head on a sheet of aluminum foil, drizzle with olive oil, and wrap it tightly. Roast for about 30 minutes or until the cloves are soft and caramelized.
Let the roasted garlic cool slightly, then squeeze the soft cloves into a bowl and mash into a smooth paste.
In a mixing bowl, combine ground beef, ground porcini mushroom powder, Worcestershire sauce, salt, pepper, and mashed roasted garlic. Mix gently to avoid overworking the meat.
Form the mixture into four equal patties, pressing a small indentation into the center of each to ensure even cooking.
Heat a skillet or grill over medium-high heat and cook the patties for 4-5 minutes per side, or until the internal temperature reaches 60°C (140°F) for medium.
In the last minute of cooking, place a slice of Gruyère cheese on each patty and cover to melt.
Toast the brioche buns lightly, then spread Dijon mustard on the bottom bun (if using).
Assemble the burgers by placing the patty on the bun, topping it with arugula, and covering with the top bun. Serve immediately!
