Instructions
In a large bowl, combine the ground lamb, Ras el Hanout, minced garlic, cilantro, mint, salt, and black pepper. Use your hands to mix gently until just combined.
Divide the lamb mixture into four equal portions and shape them into patties, ensuring they are slightly larger than the buns as they will shrink while cooking.
Heat a grill pan or skillet over medium-high heat and add olive oil. Cook the patties for about 4-5 minutes per side, or until they reach an internal temperature of 70°C (160°F).
While the patties are cooking, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, garlic, mint, and salt in a small bowl.
Toast the brioche buns or flatbread lightly to enhance their texture and flavor.
