500gramsground beefpreferably organic and grass-fed
1teaspoonsaltto taste
½teaspoonblack pepperfreshly ground
100gramsfresh mozzarellasliced
1cupheirloom tomatoessliced
1cupfresh basil leaves
4mediumciabatta bunslightly toasted
4tablespoonsbalsamic glaze
Instructions
In a large bowl, combine the ground beef with salt and pepper. Form into four equally sized patties, pressing gently to maintain tenderness.
Heat a grill or stovetop grill pan over medium-high heat. Place the patties on the grill, cooking for about 4-5 minutes on each side for medium-rare, or until the desired doneness. Use visual cues like a nice sear on the outside and a pink interior to guide you.
In the last minute of cooking, place a slice of fresh mozzarella on each patty to allow time for melting.
Remove the patties from heat and let them rest for 5 minutes to allow the juices to redistribute evenly.
Assemble the burgers by layering the grilled patty with mozzarella onto the bottom half of a toasted ciabatta bun. Add the sliced heirloom tomatoes and fresh basil leaves on top.
Drizzle a tablespoon of balsamic glaze over the toppings, cover with the top half of the bun, and gently press down.

Notes
For a twist, consider adding a slice of prosciutto beneath the patty. To make it vegetarian, swap the beef for a grilled portobello mushroom cap.
