Instructions
Prepare the Spicy Mayo: In a small bowl, mix together the mayonnaise, Sriracha, and lime juice until smooth. Chill until ready to use.
Form the Patties: In a bowl, season the ground beef with kosher salt and black pepper. Divide into 4 equal portions and form into patties about ¾-inch thick. Press a slight indentation into the center of each patty to prevent puffing during grilling.
Grill the Patties: Heat a grill or cast-iron skillet over medium-high heat (approx. 400°F / 200°C). Brush with olive oil. Grill the patties for 3–4 minutes per side or until they reach your desired doneness. During the final minute, top each patty with a slice of pepper jack cheese and let it melt.
Toast the Buns: Lightly butter the brioche buns and toast them cut-side down on the grill or in a skillet until golden brown.
Assemble the Burger: Spread spicy mayo on both the top and bottom buns. Layer with lettuce, grilled patty with melted cheese, tomato slice, red onion rings, jalapeño slices, and a generous handful of crispy onions. Close with the top bun.
