This French Ratatouille-Inspired Burger takes the rich flavors of the classic Provençal vegetable stew and transforms them into a delicious gourmet burger. Juicy grilled beef, layered with roasted eggplant, zucchini, and bell peppers, is topped with a luscious tomato confit and fresh basil, all nestled in a toasted brioche bun.

Instructions
Preheat oven to 400°F (200°C). Arrange the eggplant, zucchini, and bell pepper on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for 20-25 minutes until tender and slightly caramelized.
While vegetables roast, make the tomato confit. Heat a small pan over low heat and add olive oil, cherry tomatoes, garlic, thyme, and salt. Cook for 10-15 minutes until tomatoes soften and their juices concentrate into a jam-like consistency.
In a mixing bowl, gently combine ground beef with salt and pepper. Shape into four even patties, taking care not to overwork the meat.
Heat a grill or skillet over medium-high heat. Cook burgers for about 3-4 minutes per side for medium, adjusting to preference.
Toast the brioche buns lightly. On the bottom bun, layer roasted vegetables over the burger patty, then spoon on the tomato confit. Finish with fresh basil leaves and the top bun.
