The French Duck Confit Burger is a luxurious twist on the classic burger, combining the rich, tender flavors of duck confit with a modern gourmet approach. Inspired by traditional French cuisine, this dish offers an extraordinary blend of textures and flavors, elevating the humble burger to new culinary heights.
Preheat your oven to 120°C (250°F). Season the duck legs with salt, pepper, rosemary, and garlic. Place the legs in an ovenproof dish and submerge in duck fat. Cook in the oven for 2 hours until meat is tender.
Burger Assembly:
Once the duck confit is ready, remove the legs from the fat, and shred the meat using two forks. For a crispy finish, sear the shredded duck in a hot pan with some duck fat until golden brown.
Lightly toast brioche buns. Spread Dijon mustard on the bottom half of each bun, layer with arugula, a generous portion of duck confit, sliced Gruyère cheese, and red onion. Top with the other half of the bun.

Notes
For added flavor, consider adding a spoonful of fig jam between the duck and cheese. If Gruyère is unavailable, Emmental cheese can be a suitable substitute.
