Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium heat (about 350°F / 175°C). Add the diced potatoes and cook covered for 12–15 minutes, stirring occasionally, until tender and golden brown. Set aside.
In the same skillet, add another tablespoon of olive oil. Sauté the chopped onion and red bell pepper over medium heat for 5–6 minutes until softened and slightly caramelized.
Add the minced garlic and cook for 30 seconds, just until fragrant. Do not let it brown.
Add the ground beef to the skillet. Break it up with a wooden spoon and cook for 8–10 minutes until fully browned and no pink remains. Drain excess fat if necessary.
Return the cooked potatoes to the skillet. Sprinkle in paprika, thyme, salt, and pepper. Stir everything together and cook for 3–4 more minutes to meld the flavors and crisp the edges lightly.
Turn off the heat. Garnish with freshly chopped parsley before serving.
