Instructions
Prepare the Tea Leaf Salad Topping: In a bowl, combine the lahpet (fermented tea leaves), shredded cabbage, cherry tomatoes, crushed peanuts, fried garlic crisps, and sunflower seeds. Mix gently with a spoon until well distributed. Set aside to marinate for 10 minutes while you work on the patties.
Make the Burger Patties: In a large bowl, mix together the ground chicken, garlic, ginger, fish sauce, soy sauce, and black pepper. Form into 4 even-sized patties, about 3/4 inch thick. Flatten slightly for even cooking.
Cook the Patties: Heat a grill pan or skillet over medium-high heat (about 375°F / 190°C). Lightly oil the surface and grill each patty 5–6 minutes per side, or until golden and fully cooked with an internal temperature of 165°F (74°C).
Toast the Buns: While the patties are cooking, lightly toast the brioche buns cut side down on a skillet or grill until golden and warmed through (about 1–2 minutes).
Assemble the Burgers: Spread a thin layer of mayo on the bottom bun (optional). Add a butter lettuce leaf, then the patty, followed by a generous spoonful of the tea leaf salad topping. Top with the other bun half and serve immediately.

Notes
Short on time? Use store-bought lahpet, or substitute with mashed avocado mixed with lime juice and chili flakes for a similar punch.
Make the tea leaf salad topping ahead—it holds beautifully for up to 3 hours chilled.
Swap sunflower seeds for pumpkin seeds or crisped lentils for more texture variety.
For a vegetarian version, replace the meat with grilled portobello mushrooms or a chickpea patty, and omit the fish sauce.
