Instructions
In a medium saucepan over medium heat, combine the blueberries and 1/4 cup of water. Cook until the blueberries begin to burst, about 10 minutes, stirring occasionally.
Reduce the heat to low. Using a wooden spoon or a potato masher, gently mash the blueberries to release their juices fully.
Stir in the ketchup, brown sugar, bourbon, apple cider vinegar, Worcestershire sauce (if using), smoked paprika, ground black pepper, and salt.
Simmer the mixture on low heat for about 20 minutes, stirring occasionally, until the sauce thickens and the flavors meld together. The sauce should coat the back of a spoon slightly.
Remove from heat and let the sauce cool slightly before transferring to a blender. Blend until smooth, and then strain through a fine mesh sieve to remove pulp if a smoother texture is desired.
Adjust seasoning with additional salt or sugar if necessary. Allow the sauce to cool completely before storing in a sterilized jar or using it immediately.
