These juicy grilled pork burgers with aromatic lemongrass go alongside a spicy slaw of fennel, strips of zucchini, carrot and apple. The spiciness comes from a little siracha hot sauce in the dressing, which is made a little lighter using half yogurt and half mayonnaise with a squeeze of lime.
Make the burgers: Finely chop the lemongrass, garlic, and spring onion and mix them with the pork. Add the Worcestershire sauce and 1 teaspoon of salt and pepper. Mix well by hand, form into 4 burgers and set aside to firm up in the fridge.
For the slaw: Use a vegetable peeler to make long ribbons of carrot and zucchini. Place into a bowl.
Finely slice the apple and fennel bulbs using a mandolin or sharp knife.
Make a dressing with mayo, yogurt, maple syrup and a big squeeze of lime juice. Mix well and scatter over the coriander.
Cook the burgers for around 10 minutes on a hot BBQ grill.
