This recipe for hearty sweet potato halloumi patty is homemade protein-packed vegetarian patties that can make even the biggest meat lover hungry. You won't be disappointed!
Cut the sweet potato with skin and boil for 10 minutes until tender. Transfer the cooked sweet potato into a bowl and mash it until smooth.
Stir the grated halloumi with the rest of the ingredients together with the sweet potato. Let it sit for a few minutes so the salt absorbs a bit of the moisture. For making the patties make sure the mixture is sticky enough. If not, add more flour to it.
I suggest using your hands (wet hands make it easier to form patties) to form the mixture into tight balls and squeeze slightly into patty form.
Heat a pan on medium, then add enough oil to coat the underside of each patty. Allow them to cook for 5 minutes, then flip. Cook another 5 minutes, and serve.
