Chipotle Black Bean Burgers

  • 1 can black beans (15 oz) drained and rinsed
  • ½ cup quinoa cooked according to package directions
  • ¼ cup panko bread crumbs
  • 2 cloves garlic minced
  • 1 tablespoon minced chipotle in adobo sauce (adjust to taste)
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 pinch salt to taste
  • 1 medium egg lightly beaten
  • 6 medium buns

Sweet Corn Relish

  • 2 ears corn kernels removed
  • ¼ cup yellow onion chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 pinch salt

Red Cabbage Slaw

  • ½ cup orange juice freshly squeezed
  • ¼ cup lime juice freshly squeezed
  • ½ small red onion coarsely chopped
  • 2 cloves garlic coarsely chopped
  • ¼ cup basil leaves, fresh
  • 1 tablespoon honey
  • ½ cup olive oil
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
  • ½ head red cabbage finely shredded

Instructions
 

Chipotle Black Bean Burgers

  • Preheat oven to 400ºF (200ºC).
  • In a large bowl, mash half of the black beans with a fork or potato masher.
  • Add the remaining black beans, cooked quinoa, panko bread crumbs, minced garlic, chipotle in adobo sauce, onion powder, ground cumin, and salt. Mix well to combine.
  • Taste the mixture and adjust the spiciness if necessary.
  • Add lightly beaten egg until the mixture binds together.
  • Shape the mixture into 6 patties of equal size and arrange them on a parchment paper-lined baking sheet.
  • Bake in the oven for 20 minutes, or until done. Optionally, flip the patties halfway through baking, at the 10-minute mark, for even cooking.
  • Top your buns with the burgers and add your preferred toppings.

Sweet Corn Relish

  • In a small saucepan, combine the corn kernels, chopped onion, apple cider vinegar, sugar, and salt.
  • Bring the mixture to a boil over medium heat. Reduce heat to low and simmer for 10 minutes.
  • Remove from heat and let cool. Use as a topping for the burgers.

Red Cabbage Slaw

  • In a blender, combine the orange juice, lime juice, red onion, garlic, basil leaves, honey, olive oil, salt, and pepper.
  • Blend until the mixture is smooth.
  • Pour the dressing over the finely shredded red cabbage in a large bowl.
  • Toss to coat the cabbage evenly with the dressing.
  • Serve as a side or as a topping for the burgers.
