Lamb Burger Mixture

  • 500 grams ground lamb preferably grass-fed
  • 2 tablespoons harissa paste available in North African grocery stores or online
  • 1 teaspoon ground cumin freshly ground if possible
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground

Assembly and Toppings

  • 4 whole burger buns preferably brioche or wholegrain
  • 4 slices tomato
  • 1 handful arugula or rocket leaves
  • 1 whole red onion thinly sliced
  • 100 grams feta cheese crumbled
  • 2 tablespoons yogurt Greek-style

Instructions
 

  • In a large bowl, combine the ground lamb with harissa paste, ground cumin, salt, and black pepper. Mix gently with your hands until just combined to avoid overworking the meat.
  • Shape the mixture into four equal patties, pressing them slightly in the center to ensure even cooking.
  • Preheat your grill or a cast-iron skillet over medium-high heat to about 180°C (356°F). Cook the lamb patties for 3-4 minutes on each side, until a deep char appears and the internal temperature reaches 70°C (160°F).
  • While the burgers are cooking, lightly toast the burger buns on the grill or in a toaster.
  • To assemble, spread a small amount of Greek yogurt on both sides of the toasted buns. Layer the bottom bun with arugula, a slice of tomato, the lamb patty, red onion slices, and crumbled feta. Top with the remaining bun halves.

Notes
