  • 4 oz salmon fillets fresh, skin removed
  • 2 tbsp soy sauce low-sodium preferred
  • 1 tbsp fresh ginger grated
  • 1 tbsp wasabi paste adjust to taste
  • 8 leaves shiso leaves julienned
  • 1 cup panko breadcrumbs preferably Japanese
  • 2 tbsp sesame oil for frying
  • 4 medium burger buns lightly toasted
  • 1 cup cabbage slaw optional for serving

Instructions
 

  • Cut the salmon fillets into smaller chunks and place them in a food processor. Pulse gently until the salmon is chopped finely but not a paste.
